  • 1 tablespoon olive oil
  • 12 ounces andouille sausage (sliced)
  • 1 medium onion (diced)
  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 3 cups chicken broth
  • 1 pound shrimp (peeled and deveined)

Instructions

  1. In a large pot over medium heat, heat olive oil. Add sliced sausage and cook until browned.
  2. Add diced onion, green bell pepper, red bell pepper, celery, and garlic; sauté for about 5-7 minutes until softened.
  3. Stir in rice, Cajun seasoning, smoked paprika, and thyme; cook for another 2 minutes until fragrant.
  4. Pour in chicken broth and stir well; bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender.
  6. In the last 5 minutes of cooking, add the shrimp; cook until pink and opaque.
  7. Serve garnished with chopped green onions and parsley.
