Ingredients
- 1 tablespoon olive oil
- 12 ounces andouille sausage (sliced)

- 1 medium green bell pepper (diced)
- 1 medium red bell pepper (diced)
- 2 celery stalks (diced)
- 3 cloves garlic (minced)
- 1 1/2 cups long-grain white rice
- 2 teaspoons Cajun seasoning
- 3 cups chicken broth
- 1 pound shrimp (peeled and deveined)
Instructions
- In a large pot over medium heat, heat olive oil. Add sliced sausage and cook until browned.
- Add diced onion, green bell pepper, red bell pepper, celery, and garlic; sauté for about 5-7 minutes until softened.
- Stir in rice, Cajun seasoning, smoked paprika, and thyme; cook for another 2 minutes until fragrant.
