  • 16 ounces semi-sweet chocolate (finely chopped)
  • 2 and 1/4 cups heavy cream
  • 1/2 cup unsalted butter (at room temperature)
  • 1/2 cup packed light brown sugar
  • 1/2 cup half-and-half
  • 7 oz bag sweetened shredded coconut
  • 1 teaspoon vanilla extract
  • 1/4 cup pecans (chopped)

Instructions

  1. Prepare the crust by mixing crushed Oreo cookies with melted butter and pressing it into a 9-inch pie dish. Refrigerate.
  2. For the filling, melt semi-sweet chocolate with half-and-half using a double boiler until smooth.
  3. Whip heavy cream in a separate bowl until soft peaks form.
  4. In another bowl, combine room temperature butter, brown sugar, egg yolks, vanilla extract, coconut, and pecans. Fold in the cooled chocolate mixture followed by whipped cream.
  5. Pour filling into the prepared crust and smooth the top. Cover and refrigerate for at least 4 hours or overnight.
