- 2.5 lbs bone-in chicken (thighs or drumsticks)
- 4 large Roma tomatoes
- 1 large red bell pepper
- 2 scotch bonnet peppers (or adjust for heat preference)
- 1/4 cup vegetable oil
- 1 tablespoon curry powder
- 1 teaspoon thyme
- 1 onion (chopped)
- Salt and black pepper to taste
Instructions
- Marinate the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onions for at least 30 minutes.
- Heat vegetable oil in a large skillet over medium-high heat and sear the marinated chicken until browned on both sides; set aside.
- Blend together Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers until smooth.
- In the same skillet, fry tomato paste for about 2 minutes before adding the blended sauce mixture. Cook for 10 minutes on medium heat.
- Stir in garlic powder, ginger powder, bouillon cube, and additional salt if needed.
- Return seared chicken to the skillet and simmer on low for 25–30 minutes until tender.
