  • 2 cups couscous
  • 3 cups water
  • 2 cups tomatoes
  • 1/3 cup red onions
  • 1/2 cucumber
  • 15 oz chickpeas
  • 14 oz artichoke hearts
  • 1/2 cup olives
  • 20 basil leaves
  • 4 oz mozzarella
  • 1.5 lemons
  • 1/3 cup olive oil
  • 1.5 tsp dill
  • 2 garlic cloves
  • salt to taste
  • black pepper to taste
  • 2.5 tbsp olive oil

Instructions

  1. Prepare the dressing by whisking together lemon juice, olive oil, dill, minced garlic, salt, and pepper in a small bowl.
  2. Boil water in a pot and add couscous. Stir briefly, cover, and let sit until water is absorbed (about 10 minutes).
  3. Chop tomatoes, red onions, cucumber; rinse chickpeas and artichokes; slice olives.
  4. Fluff cooked couscous in a large bowl and mix in all chopped vegetables, chickpeas, artichokes, olives, basil leaves, and mozzarella.
  5. Pour the dressing over the mixture and toss gently until well coated.
  6. Serve immediately or refrigerate for up to two days.
