  • 2 tablespoons olive oil
  • 1 lb lamb shoulder, cut into chunks
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 3 large carrots, chopped
  • 2 small zucchinis, sliced
  • 1/2 cup prunes, chopped

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Sear lamb chunks until browned (5-7 minutes).
  2. Add onion; cook until softened (3-4 minutes). Stir in garlic and ginger; cook for another minute.
  3. Incorporate spices; stir to coat meat and onions evenly.
  4. Add chickpeas, carrots, zucchini, and prunes; mix well.
  5. Pour in enough water to cover ingredients (about 2 cups). Bring to a boil; reduce heat and simmer for about 1 hour until lamb is tender.
  6. Serve warm over couscous or enjoy as is.
