Ingredients

  • 2 lbs lamb leg, cut into large chunks
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ras el hanout
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 1 cup beef or vegetable broth

Instructions

  1. Season lamb chunks with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Brown the lamb in batches for about 5-7 minutes; set aside.
  2. In the same pot, sauté the onion until translucent (3-4 minutes). Add garlic and stir until fragrant (1 minute). Mix in ras el hanout, cinnamon, and ginger for another minute.
  3. Return the lamb to the pot and pour in the broth. Bring to a simmer.
  4. Cover and reduce heat to low. Cook slowly for 2-3 hours until the lamb is tender.
