Ingredients
- 2 tablespoons coconut oil
- 2 tablespoons olive oil
- 1/2 yellow onion (diced)
- 1 jalapeño (diced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 2 cloves garlic (chopped)
- 1 teaspoon sweet paprika
- 2 pounds cod (or firm white fish, cut into pieces)
- 2 cups seafood stock
- 13 ounces coconut milk
- Juice and zest of 1 lime
- Garnish: chopped green onions, lime wedges
Instructions
- Heat coconut and olive oils in a large pot over medium heat. Sauté diced onion and jalapeño until softened.
- Add sliced bell peppers and garlic; sauté for another few minutes.
- Stir in sweet paprika, then add cod pieces gently on top of the vegetables.
- Pour in seafood stock and coconut milk; add lime zest. Season with salt and pepper.
