  • 2 tablespoons coconut oil
  • 2 tablespoons olive oil
  • 1/2 yellow onion (diced)
  • 1 jalapeño (diced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 2 cloves garlic (chopped)
  • 1 teaspoon sweet paprika
  • 2 pounds cod (or firm white fish, cut into pieces)
  • 2 cups seafood stock
  • 13 ounces coconut milk
  • Juice and zest of 1 lime
  • Garnish: chopped green onions, lime wedges

Instructions

  1. Heat coconut and olive oils in a large pot over medium heat. Sauté diced onion and jalapeño until softened.
  2. Add sliced bell peppers and garlic; sauté for another few minutes.
  3. Stir in sweet paprika, then add cod pieces gently on top of the vegetables.
  4. Pour in seafood stock and coconut milk; add lime zest. Season with salt and pepper.
  5. Cover and simmer for about 10-15 minutes, until fish is cooked through.
  6. Serve hot over jasmine rice, garnished with green onions and lime wedges.
