- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup plain Greek yogurt

- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 cup granulated sugar (for cinnamon swirl)
- 1 tablespoon cinnamon (for cinnamon swirl)
Instructions
- Preheat oven to 350°F and line a 9×5 loaf pan with parchment paper.
- In a mixing bowl, combine wet ingredients: zucchini, eggs, oil, yogurt, and vanilla.
- In another bowl, mix dry ingredients: flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add dry ingredients to wet mixture; stir until just combined.
- For the swirl mix together cinnamon and sugar in a small bowl.
- Pour half of the batter into the prepared pan; sprinkle half of the cinnamon-sugar mixture on top.
- Add remaining batter and top with the rest of the cinnamon-sugar mixture; swirl gently with a knife.
- Bake for 60-65 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10-15 minutes before slicing.
