  • 1 cup finely shredded zucchini
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for cinnamon swirl)
  • 1 tablespoon cinnamon (for cinnamon swirl)

Instructions

  1. Preheat oven to 350°F and line a 9×5 loaf pan with parchment paper.
  2. In a mixing bowl, combine wet ingredients: zucchini, eggs, oil, yogurt, and vanilla.
  3. In another bowl, mix dry ingredients: flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add dry ingredients to wet mixture; stir until just combined.
  5. For the swirl mix together cinnamon and sugar in a small bowl.
  6. Pour half of the batter into the prepared pan; sprinkle half of the cinnamon-sugar mixture on top.
  7. Add remaining batter and top with the rest of the cinnamon-sugar mixture; swirl gently with a knife.
  8. Bake for 60-65 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10-15 minutes before slicing.
