Ingredients

Scale
  • 1/2 cup rolled oats
  • 1 cup almond butter
  • 2 tbsp honey
  • 1/4 cup vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup mini dark chocolate chips
  • Unsweetened almond milk (optional)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix until well blended.
  2. If the mixture is too dry, add unsweetened almond milk one tablespoon at a time until slightly sticky but manageable.
  3. Gently fold in mini dark chocolate chips.
  4. Scoop out one tablespoon of the mixture and roll it into a ball using your hands. Repeat until all mixture is used.
  5. Place rolled balls on a parchment-lined baking sheet and refrigerate for at least 20 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
