  • 1 can (15 fluid ounces) cannellini beans (drained & rinsed)
  • 2 mini cucumbers (chopped)
  • 1/2 red bell pepper (chopped)
  • 10 ounces grape or cherry tomatoes (halved)
  • 1/3 cup Kalamata olives (pitted & chopped)
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon red apple vinegar
  • Fresh parsley, oregano, salt & pepper to taste

Instructions

  1. Rinse the cannellini beans under cold water and chop cucumbers, red bell pepper, and tomatoes into bite-sized pieces.
  2. In a large bowl, combine the beans with chopped vegetables, Kalamata olives, parsley, oregano, and feta cheese.
  3. Drizzle olive oil and red apple vinegar over the mixture. Season with salt and pepper to taste.
  4. Toss gently until well combined; adjust seasoning as needed.
  5. Serve immediately or chill for about 30 minutes to enhance flavors.
