Ingredients

  • 1 grilled chicken breast, sliced
  • 2 jammy eggs, boiled and halved
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, chopped
  • 1 cup kalamata olives
  • 2 tbsp crumbled feta cheese
  • 1 cup mixed greens or romaine lettuce
  • Salt & cracked pepper to taste

Instructions

  1. Grill or pan-sear the chicken breast for about 4–5 minutes per side until fully cooked. Let it rest before slicing.
  2. Boil water in a pot and cook eggs for exactly 7 minutes. Transfer them to an ice bath, peel once cooled, and halve.
  3. In a large bowl, layer the mixed greens as a base, then add avocado slices, cucumber chunks, halved cherry tomatoes, olives, sliced chicken breast, and jammy eggs. Top with crumbled feta cheese and season with salt and pepper.
  4. Drizzle with olive oil and lemon juice (or your choice of dressing), toss gently if desired, and serve immediately.
