  • 12 ounces dry pasta (e.g., farfalle)
  • 1 English cucumber
  • 1 pint cherry tomatoes
  • 2/3 cup kalamata olives
  • 4 ounces feta cheese
  • 1 medium red onion
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • pinch of crushed red pepper flakes

Instructions

  1. Cook pasta in salted boiling water until al dente according to package instructions. Drain and rinse with cold water.
  2. Dice cucumber and halve cherry tomatoes while pasta cooks.
  3. In a mixing bowl, whisk together olive oil, vinegar, lemon juice, oregano, honey, garlic, black pepper, salt, and red pepper flakes.
  4. Combine cooled pasta with cucumbers, tomatoes, olives, red onion, and feta cheese in a large bowl.
  5. Drizzle dressing over the salad mixture and toss gently until coated.
  6. Garnish with fresh parsley before serving.
