  • Parmesan rind
  • Dried oregano
  • Red chili pepper flakes
  • Fresh rosemary
  • Orzo pasta
  • Curly kale
  • Sea salt and black pepper
  • Fresh basil leaves

Instructions

  1. In a large saucepan over medium heat, sauté diced onion, carrot, and celery in olive oil for about 5 minutes until softened.
  2. Stir in minced garlic for an additional minute until aromatic.
  3. Add vegetable stock, Parmesan rind, cherry tomatoes, oregano, red chili flakes, and rosemary; bring to a simmer.
  4. Stir in orzo pasta and cook for approximately 8 minutes until al dente.
  5. Mix in chopped kale until wilted; adjust seasoning to taste.
  6. Discard the Parmesan rind before serving; garnish with extra virgin olive oil and grated Parmesan.
