  • Onion
  • Carrots
  • Celery
  • Garlic
  • Tomato paste
  • Ground cumin
  • Ground coriander
  • Smoked paprika
  • Dried oregano
  • Brown or green lentils
  • Vegetable broth
  • Bay leaf
  • Diced tomatoes
  • Spinach or kale (optional)
  • Lemon juice
  • Fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion, carrots, and celery for 5–7 minutes until softened. Add minced garlic, tomato paste, cumin, coriander, paprika, and oregano; cook for an additional 1–2 minutes.
  2. Stir in rinsed lentils, vegetable broth, bay leaf, and diced tomatoes. Bring to a boil and then reduce heat to simmer for 25–30 minutes until lentils are tender.
  3. If using greens, add spinach or kale until wilted. Finish with lemon juice and adjust seasoning with salt and pepper to taste.
