  • 1.5 lbs boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 1 cup Kalamata olives
  • 4 cloves garlic
  • 0.5 cup crumbled feta cheese
  • Fresh parsley (optional)

Instructions

  1. Prep all ingredients by chopping vegetables and cutting chicken into bite-sized pieces.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat, add chicken, and cook until golden brown (5–7 minutes). Remove chicken from the pan.
  3. In the same skillet, add remaining olive oil and sauté onions until soft (about 3 minutes). Add garlic, zucchini, bell peppers, cherry tomatoes, sun-dried tomatoes, salt, and pepper; cook until tender (5–7 minutes).
  4. Return chicken to skillet, toss with dried herbs (oregano, basil, thyme), and mix well.
  5. Finish with fresh lemon juice, Kalamata olives, and crumbled feta cheese before serving.
