- 2 tablespoons extra virgin olive oil
- 2 tablespoons bourbon (Maker's Mark recommended)
- 1 cup chicken broth
- 1/4 cup chopped pecans
- 3 tablespoons pure maple syrup
- 1 tablespoon dijon mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons gluten-free reduced-sodium Tamari
- 1/4 teaspoon dried rosemary (crushed)
Instructions
- Season gluten-free flour with salt and pepper in a shallow dish. Dredge each chicken thigh in the seasoned flour and set aside.
- Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken thighs until golden brown on both sides (about 1-2 minutes per side). Remove from skillet.
- Whisk together chicken broth, maple syrup, pecans, dijon mustard, apple cider vinegar, tamari, and rosemary in a bowl.
- Carefully add bourbon to the hot skillet, then mix in the sauce ingredients. Return chicken to the skillet and simmer for about 10 minutes until cooked through and sauce thickens.
