Ingredients

Scale
  • 1 large head of cauliflower (about 2 lbs)
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream (or plant-based alternative)
  • Salt and pepper to taste
  • Optional: Pinch of nutmeg and fresh herbs for garnish

Instructions

  2. Toss florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
