Ingredients

  • 1 1/2 lemons
  • 1 bunch scallions
  • 1/3 cup plus 3 tablespoons olive oil
  • 10 ounces feta cheese
  • 4 ounces cream cheese (or heavy cream)
  • Black pepper and cayenne to taste

Instructions

  1. Preheat your broiler and line a sheet pan with foil.
  2. Juice one lemon and slice the other half into thin rounds. Toss scallions and lemon slices in olive oil.
  3. Spread the mixture on the sheet pan and broil for 7 to 9 minutes until charred.
  4. In a food processor, combine feta, cream cheese, remaining olive oil, lemon juice, black pepper, cayenne, and hot water; blend until smooth.
