  • 4 lamb shanks (1 lb each)
  • 2 stalks lemongrass
  • 3-inch piece fresh ginger
  • 5 garlic cloves
  • 1 onion
  • Soy sauce
  • Fish sauce
  • Brown sugar
  • Sesame oil
  • Lime juice
  • Beef or chicken broth
  • 2 cups jasmine rice
  • 1 can coconut milk

Instructions

  1. Sear the lamb shanks in a Dutch oven until browned on all sides. Remove and set aside.
  2. In the same pot, sauté sliced onion and garlic until soft, then add lemongrass and ginger.
  3. Return lamb to the pot and add soy sauce, fish sauce, brown sugar, sesame oil, lime juice, and broth. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 2–2.5 hours until tender.
  5. Meanwhile, rinse jasmine rice and cook it with coconut milk as per standard instructions.
  6. Serve by plating coconut rice topped with lamb shank and broth; garnish with cilantro and lime wedges.
