  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • Spicy mayo drizzle (mayonnaise, sriracha, lime juice)

Instructions

  1. In a mixing bowl, whisk together ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper to create the marinade.
  2. Add chicken pieces to the marinade and refrigerate for at least 15 minutes.
  3. Cook rice by combining it with coconut milk, water, and salt in a rice cooker or saucepan until fluffy.
  4. Heat a skillet over medium-high heat and sauté marinated chicken until browned and cooked through (about 5–7 minutes). Add reserved marinade during the last few minutes of cooking.
  5. Combine pineapple, mango, red onion, lime juice, cilantro (if using), salt, and pepper in a bowl to make the salsa.
  6. For the spicy mayo drizzle, mix mayonnaise with sriracha and lime juice until smooth.
  7. Serve chicken on a bed of coconut rice topped with pineapple mango salsa and drizzle with spicy mayo.
