  • 1 tablespoon olive oil
  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic
  • 1 ½ pounds boneless skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced carrots, onion, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic, black pepper, dried parsley, thyme, salt, and bay leaves; cook for another minute until fragrant.
  3. Add chicken breasts to the pot along with the chicken broth. Bring to a boil.
  4. Reduce heat to medium-low; cover and simmer for about 30 minutes until chicken is cooked through.
  5. Meanwhile, cook orzo pasta separately according to package instructions; drain and set aside.
  6. Remove cooked chicken from the pot, shred it using two forks, and return it to the soup.
  7. Stir in fresh lemon juice just before serving.
