  • 1/2 tsp vanilla extract
  • 1/4 cup granulated sugar (for blueberry jam)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, very softened
  • 1/4 cup granulated sugar (for rolling dough)

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese with sugar and vanilla until smooth; scoop onto parchment-lined sheets and freeze.
  2. Cook fresh blueberries with sugar in a saucepan over medium heat until thickened; cool completely.
  3. Mix dry ingredients: flour, baking powder, baking soda, and salt.
  4. Beat lemon zest into sugar with softened butter until fluffy; add egg and remaining vanilla.
  5. Combine wet and dry ingredients; form dough balls, place frozen cheesecake centers inside, seal, and roll in sugar.
  6. Indent cookies to hold blueberry jam; bake at 350°F for 12–14 minutes until edges are golden.
