  • 1 tablespoon whipping cream (as needed for frosting)
  • 3/4 cup unsalted butter (for additional frosting layer)
  • 12 ounces brick-style cream cheese (for additional frosting layer)
  • 1 1/2 teaspoons lemon juice (for additional frosting layer)
  • 4 1/25 1/2 cups powdered sugar (for additional frosting layer)
  • 12 tablespoons whipping cream (as needed for additional frosting layer)

Instructions

  1. Preheat your oven to 350F (180C) and prepare your baking pan by greasing and flouring it.
  2. In one bowl, sift together cake flour, baking powder, baking soda, and salt; set aside.
  3. In another bowl, combine buttermilk and lemon juice; whisk well.
  4. Beat softened butter with sugar and lemon zest until fluffy; add eggs one at a time along with vanilla.
  5. Gradually mix in dry ingredients followed by the wet mixture until just combined; fold in blueberries.
  6. Pour into prepared pan(s) and bake for about 30-35 minutes or until a toothpick comes out clean.
