  • 23 tbsp fresh lemon juice (for glaze)
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 loaf pan.
  2. In one bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix together sugar, oil, sour cream, eggs, lemon juice, lemon zest, and vanilla until smooth.
  4. Combine wet and dry ingredients gently without overmixing.
  5. Toss blueberries in flour and fold them into the batter.
  6. Pour batter into the prepared loaf pan and bake for 55-65 minutes until golden brown.
  7. Let cool before glazing with a mix of powdered sugar and lemon juice.
