- 1/2 cup giant/pearl couscous
- 2 cups cooked turkey or chicken
- Salt and pepper to taste
- 1 tbsp chopped parsley
Instructions
- Heat olive oil and butter in a large pot over low heat. Add chopped onion, celery, carrots, and garlic with thyme. Sauté until soft (about 5 minutes).
- Pour in the stock and add cooked turkey. Toss in bay leaves, season with salt and pepper, and bring to a boil.
