  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion, finely diced
  • 8 cloves garlic, crushed
  • 2 tbsp gochujang
  • 5 green onions, minced
  • 2 large eggs, lightly beaten
  • 3 tbsp apricot jam
  • 2 tbsp gochujang
  • 1 tbsp rice vinegar
  • 1 tbsp honey

Instructions

  1. Preheat oven to 350°F.
  2. Sauté finely diced onion in vegetable oil until translucent; add garlic and cook briefly.
  3. In a bowl, combine cooled onion mixture with green onions, gochujang, eggs, and salt.
  4. In another bowl, mix ground beef and panko; fold in the onion mixture gently.
  5. Shape into a loaf in a pan or on a baking sheet.
  6. Bake until internal temperature reaches 140°F (about 40 minutes).
  7. Prepare glaze by combining all ingredients; spoon over meatloaf once it reaches temperature.
  8. Return to oven until internal temperature is 160°F (another 10-15 minutes).
