  • 5 tablespoons salted butter (melted)
  • 1 cup almond flour
  • 8 ounces cream cheese (softened)
  • 1 egg yolk
  • 3 large eggs
  • 1/3 cup lemon juice
  • 1/2 cup confectioners sweetener
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon zest
  • 1/3 cup coconut flour

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with aluminum foil.
  2. In a mixing bowl, combine melted butter, almond flour, and confectioners sweetener for the crust. Press into the bottom of the pan and pre-bake for 7 minutes.
  3. For the cheesecake layer, blend cream cheese, egg yolk, confectioners sweetener, vanilla extract, lemon juice, and zest until smooth. Spread over cooled crust.
  4. For the lemon bar layer, blend eggs, lemon juice, zest, confectioners sweetener, and coconut flour until smooth. Chill for 10 minutes before pouring over cheesecake layer.
  5. Bake for 20-25 minutes until set but slightly jiggly in the center. Let cool before slicing.
