Ingredients
- 5 tablespoons salted butter (melted)
- 1 cup almond flour
- 8 ounces cream cheese (softened)
- 1 egg yolk
- 3 large eggs
- 1/3 cup lemon juice
- 1/2 cup confectioners sweetener
- 1 tablespoon lemon zest
- 2 tablespoons lemon zest
- 1/3 cup coconut flour
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with aluminum foil.
- In a mixing bowl, combine melted butter, almond flour, and confectioners sweetener for the crust. Press into the bottom of the pan and pre-bake for 7 minutes.
- For the cheesecake layer, blend cream cheese, egg yolk, confectioners sweetener, vanilla extract, lemon juice, and zest until smooth. Spread over cooled crust.
- For the lemon bar layer, blend eggs, lemon juice, zest, confectioners sweetener, and coconut flour until smooth. Chill for 10 minutes before pouring over cheesecake layer.
- Bake for 20-25 minutes until set but slightly jiggly in the center. Let cool before slicing.
