  • 1 lb lean ground chicken
  • 1 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 4 green onions, finely chopped
  • ½ cup fresh cilantro leaves
  • 1 (13.5 oz) can full-fat coconut milk
  • 2 tbsp red curry paste
  • 1 cup chicken or vegetable broth
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground chicken, ginger, garlic, green onions, cilantro, salt, and pepper. Mix until well blended.
  2. Shape the mixture into small meatballs, about one inch in diameter.
  3. Heat a skillet over medium heat with a splash of oil. Sear the meatballs until browned on all sides (about 5 minutes).
  4. In the same skillet, add coconut milk and red curry paste; stir until combined.
  5. Add broth and lime juice to the skillet; bring to a gentle simmer.
  6. Carefully add meatballs back into the sauce; cover and simmer for about 10 minutes until cooked through.
  7. Serve over jasmine rice or noodles with extra sauce and cilantro as garnish.
