- 1/4 cup green onions, finely chopped
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1/2 cup panko breadcrumbs
- 1/4 cup ketchup
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 2 tbsp water
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, green onions, ginger, garlic, panko breadcrumbs, ketchup, salt, and pepper until well mixed.
- Roll the mixture into balls (about two tablespoons each) and place them on the prepared baking sheet.
- Bake for 20–25 minutes or until golden brown and cooked through.
- While baking, whisk together soy sauce, honey (or maple syrup), rice vinegar, and water in a saucepan over medium heat until slightly thickened.
- Drizzle the teriyaki sauce over the cooked meatballs and toss gently to coat before serving.
