- 16 oz full-fat cream cheese, softened
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp agar-agar powder
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan and bake for about 10 minutes until golden brown.
- In another bowl, beat cream cheese and sugar together until smooth. Add lemon juice and vanilla; mix well.
- Fold in chopped strawberries. Prepare agar-agar according to package instructions, then mix it into the cheesecake filling.
- Pour the filling over the cooled crust. Top with reserved strawberry slices.
- Refrigerate for at least four hours or overnight to set.
- Slice and serve chilled.
