  • 2 cups fresh strawberries, chopped
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup full-fat sour cream
  • 1 tsp pure vanilla extract
  • 1/2 cup melted butter
  • 1 1/2 cups graham cracker crumbs
  • 2 tsp agar-agar powder (or plant-based gelling agent)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a springform pan.
  2. In a bowl, mix graham cracker crumbs and melted butter; press into the bottom of the pan. Bake for 10 minutes until golden brown. Let cool.
  3. Beat cream cheese and sugar until smooth. Add sour cream and vanilla, mixing until creamy. Gently fold in chopped strawberries.
  4. Prepare agar-agar according to package instructions and mix it into the filling.
  5. Pour the filling over the cooled crust; refrigerate for at least four hours or overnight.
  6. Serve chilled, garnished with extra strawberries.
