- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 cups low-sodium chicken broth
- 1 cup diced bell peppers (mixed colors)
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Rinse rice under cold water until clear. In a saucepan, combine rinsed rice and chicken broth; bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until liquid is absorbed.
- While rice cooks, heat olive oil in a skillet over medium-high heat. Add diced bell peppers and sauté for about 5 minutes until softened.
- Season steak with salt, pepper, cumin, paprika, and garlic powder. In another skillet over high heat, sear each side for about 4 minutes for medium-rare. Let rest before slicing.
- Once rice is cooked, add it to the skillet with bell peppers. Stir in shredded cheeses until melted.
- Gently mix in sliced steak strips until well combined.
