  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/3 cup favorite jelly or jam

Instructions

  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together unsalted butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Scoop dough onto baking sheets about two inches apart; make an indentation in each ball and fill with jelly.
  7. Bake for about 10 minutes or until lightly golden around the edges. Allow to cool slightly before transferring to wire racks.
