  • 6 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • ¼ cup freshly squeezed lemon juice
  • 1 cup blueberry puree (fresh or frozen)
  • 2 tsp agar-agar powder

Instructions

  1. Prepare the crust: Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form a solid base.
  2. Make the cream cheese filling: Beat softened cream cheese until smooth, gradually mixing in powdered sugar and lemon juice until well combined.
  3. Create blueberry layer: Puree blueberries in a blender until smooth.
  4. Layer the cake: Spread half of the cream cheese mixture over the crust, pour half of the blueberry puree on top, and repeat with remaining layers.
  5. Set with agar-agar: Dissolve agar-agar in warm water according to package instructions and fold it into the cream cheese filling before spreading it over the layered cake.
