  • 2 cups mixed mushrooms (cremini and shiitake), cleaned and chopped
  • 1 cup grated aged Gruyere cheese
  • 2 tablespoons fresh thyme leaves
  • 3 tablespoons olive oil, divided
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the baguette diagonally into half-inch pieces and arrange them on a baking sheet. Brush lightly with 1 tablespoon of olive oil.
  2. Toast the baguette slices in the oven for 5-7 minutes until golden brown.
  3. While the bread is toasting, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add minced garlic and sauté for one minute until fragrant.
  4. Add chopped mushrooms, season with salt and pepper, and cook for about five minutes until tender. Stir in fresh thyme and cook for another minute.
  5. Remove the toasted baguette from the oven. Top each slice with a generous spoonful of the mushroom mixture and sprinkle with grated Gruyere cheese.
  6. Return the bruschetta to the oven for another 5-7 minutes until the cheese is melted and bubbly. Serve warm.
