- 2 tbsp fresh lime juice

- 2 tsp agar-agar powder
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine all-purpose flour and powdered sugar. Add non-dairy butter, mixing until crumbly. Press into a tart pan.
- Bake the crust for 15-20 minutes until golden brown; let cool.
- Blend mangoes until smooth. In a saucepan, mix mango puree, granulated sugar, lime juice, and agar-agar over medium heat.
- Stir until thickened (5-7 minutes), then remove from heat and mix in non-dairy butter until melted.
- Pour curd into cooled crust; refrigerate for at least 2 hours to set.
- Slice and serve chilled; garnish with mint or extra mango slices if desired.
