  • 2 cups fresh ripe mango puree (about 34 mangoes)
  • 1 cup granulated sugar
  • 2 tbsp fresh lime juice
  • 1/2 cup non-dairy butter (like coconut or plant-based)
  • 2 tsp agar-agar powder
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine all-purpose flour and powdered sugar. Add non-dairy butter, mixing until crumbly. Press into a tart pan.
  2. Bake the crust for 15-20 minutes until golden brown; let cool.
  3. Blend mangoes until smooth. In a saucepan, mix mango puree, granulated sugar, lime juice, and agar-agar over medium heat.
  4. Stir until thickened (5-7 minutes), then remove from heat and mix in non-dairy butter until melted.
  5. Pour curd into cooled crust; refrigerate for at least 2 hours to set.
  6. Slice and serve chilled; garnish with mint or extra mango slices if desired.
