- 1 cup fresh parsley, packed
- 2 garlic cloves
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (plus more for baking)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup tahini sauce
Instructions
- Preheat the oven to 400°F (200°C).
- In a food processor, blend chickpeas, parsley, garlic, cumin, coriander, salt, pepper, and olive oil until slightly chunky.
- Form tablespoon-sized balls from the mixture and place them on a parchment-lined baking sheet. Lightly spray with olive oil.
- Bake for 20-25 minutes until golden brown and crispy.
