  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup fresh parsley, packed
  • 2 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (plus more for baking)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup tahini sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, blend chickpeas, parsley, garlic, cumin, coriander, salt, pepper, and olive oil until slightly chunky.
  3. Form tablespoon-sized balls from the mixture and place them on a parchment-lined baking sheet. Lightly spray with olive oil.
  4. Bake for 20-25 minutes until golden brown and crispy.
  5. While baking, combine cherry tomatoes and cucumber in a bowl with salt and olive oil.
  6. Assemble by layering leafy greens (if desired), topping with veggies and drizzled tahini sauce.
