  • 1 cup dried chickpeas (soaked overnight)
  • 1/4 cup fresh parsley (finely chopped)
  • 2 tsp cumin powder
  • 2 garlic cloves (minced)
  • 1 small onion (finely chopped)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp baking powder
  • 3 tbsp olive oil (for frying)
  • 4 cups mixed greens
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 3 tbsp tahini sauce

Instructions

  1. Soak chickpeas in water overnight; drain before use.
  2. In a food processor, combine soaked chickpeas, garlic, onion, parsley, cumin, salt, pepper, and baking powder. Pulse until coarse but combined.
  3. Form the mixture into small balls or patties using wet hands.
  4. Heat olive oil in a skillet over medium heat. Fry falafels until golden brown on both sides (about 3 minutes each).
  5. In bowls, layer mixed greens and top with fried falafels, cherry tomatoes, cucumbers, and drizzle with tahini sauce.
  6. Serve warm or at room temperature.
