  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • Zest and juice of 2 fresh lemons (about 1/2 cup juice)
  • 1 cup raspberries (fresh or frozen)
  • 1 tbsp agar-agar powder
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a square baking pan by greasing it or lining it with parchment paper.
  2. In a bowl, mix flour, sugar, and salt. Blend in softened butter until crumbly. Press evenly into the prepared pan.
  3. Bake the crust for 15-20 minutes until golden brown.
  4. While the crust bakes, whisk together lemon zest, lemon juice, sugar, agar-agar powder, baking powder, and gently fold in raspberries.
  5. Once the crust is slightly cooled, pour the lemon-raspberry mixture over it.
  6. Bake for an additional 20-25 minutes until set but jiggly in the center. Let cool completely before slicing.
