  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/3 cup hot honey
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 bell peppers (any color), sliced
  • 2 cups broccoli florets
  • 2 cups cooked rice or quinoa
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop bell peppers and broccoli into bite-sized pieces.
  2. In a bowl, mix hot honey, minced garlic, grated ginger, salt, and pepper. Add chicken breasts and coat well. Let marinate for 15-30 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet.
  4. In the same skillet, sauté chopped vegetables for about five minutes until tender-crisp.
  5. Assemble bowls by placing rice or quinoa at the bottom, topped with sliced chicken and sautéed veggies. Drizzle with extra hot honey before serving.
