  • 1.5 lbs boneless, skinless chicken thighs
  • 2 medium red bell peppers, sliced
  • 1 medium zucchini, sliced into half-moons
  • 1 large red onion, cut into wedges
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken thighs, olive oil, lemon juice, oregano, salt, and pepper. Let marinate for at least 10 minutes.
