  • 3 cloves fresh garlic, minced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ cup crumbled feta cheese
  • 2 tsp dried oregano
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt, pepper, and dried oregano; place them in the baking dish.
  3. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C). Let cool slightly.

  5. Shred or cube the cooked chicken and mix it in a bowl with cottage cheese, feta cheese, tomatoes, and cucumber.
