- 10 egg roll wrappers
- 3 cloves garlic (minced)
- 1 tbsp ginger (grated)
- 2 tbsp low-sodium soy sauce
- Vegetable oil (for frying)
Instructions
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add minced garlic and grated ginger; sauté until fragrant.
- Stir in chopped green onions, shredded cabbage, and carrots. Cook for 3-4 minutes until tender yet crunchy; remove from heat and cool slightly.
- Mix in the shrimp and soy sauce until evenly coated.
- Lay an egg roll wrapper on a surface with one corner facing you. Place two tablespoons of filling at the center, fold the bottom corner over the filling, tuck in sides, and roll tightly.
- Heat vegetable oil in a deep pan to about 350°F (175°C). Fry egg rolls in batches until golden brown on all sides, about 3-4 minutes per side.
- Drain excess oil on paper towels before serving with your favorite dipping sauce.
