  • 8 ounces elbow macaroni
  • 4 large hard-boiled eggs
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 green onions, finely chopped
  • 1 stalk celery, finely chopped
  • 1 teaspoon paprika (plus extra for garnish)
  • Salt and pepper to taste

Instructions

  1. Boil the pasta in salted water until al dente. Drain and rinse under cold water.
  2. Hard-boil the eggs by placing them in cold water, bringing to a boil, then letting sit covered for 10-12 minutes before transferring to an ice bath.
  3. In a mixing bowl, whisk together mayonnaise and Dijon mustard until smooth.
  4. Chop hard-boiled eggs and add them to the bowl with pasta, green onions, celery, and half of the paprika. Gently fold until combined.
  5. Season with salt and pepper. Cover and chill in the refrigerator for at least one hour.
  6. Before serving, stir gently and garnish with remaining paprika.
