Instructions
- Boil the pasta in salted water until al dente. Drain and rinse under cold water.
- Hard-boil the eggs by placing them in cold water, bringing to a boil, then letting sit covered for 10-12 minutes before transferring to an ice bath.
- In a mixing bowl, whisk together mayonnaise and Dijon mustard until smooth.
- Chop hard-boiled eggs and add them to the bowl with pasta, green onions, celery, and half of the paprika. Gently fold until combined.
- Season with salt and pepper. Cover and chill in the refrigerator for at least one hour.
- Before serving, stir gently and garnish with remaining paprika.
