  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 12 oz rigatoni pasta
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 cup chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and heat a large skillet over medium-high heat.
  2. Melt 2 tablespoons of butter in the skillet. Season chicken with salt, pepper, and half of the Italian seasoning. Sear for about 6 minutes on each side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, add minced garlic and sauté for about one minute until fragrant.
  4. Pour in heavy cream and chicken broth, scraping up brown bits from the pan. Bring to a simmer and stir in parmesan cheese until melted.
  5. Cook rigatoni according to package instructions until al dente. Drain and mix with the creamy sauce and sliced chicken until well coated.
  6. Serve hot, garnished with additional parmesan if desired.
