- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1 oz ranch seasoning mix (1 packet)
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese (divided)
- 2 green onions, chopped
- 4 large russet baking potatoes
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick spray.
- Wash and dry the potatoes. Prick them with a fork and bake directly on the oven rack for about 60 minutes until tender.
- In a pot, combine chicken breasts and chicken broth. Bring to a boil then simmer for 15-20 minutes until cooked through.
- Shred the cooked chicken and mix it in a bowl with cream cheese, ranch seasoning, garlic, half of the cheddar cheese, and green onions.
