  • 4 large russet potatoes
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 green onions, chopped
  • 1 tsp garlic powder
  • 1 packet ranch seasoning mix

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes and poke holes in each with a fork. Wrap them in aluminum foil.
  2. Bake the wrapped potatoes on the oven rack for 45-60 minutes until soft.
  3. While baking, cook the chicken in a saucepan with broth over medium heat for about 20-25 minutes until fully cooked. Shred the chicken.
  4. In a bowl, combine the shredded chicken with cream cheese, ranch seasoning, garlic powder, half of the cheddar cheese, and green onions.
  5. Cut open each baked potato lengthwise and fluff the insides with a fork. Stuff each potato with the chicken mixture.
  6. Return stuffed potatoes to the oven for an additional 10-15 minutes until heated through and cheese is melted.
