Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • ¼ cup unsweetened cocoa powder
  • 1 cup fresh strawberries, pureed

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, combine graham cracker crumbs and melted butter; press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and cocoa powder until fully blended.
  4. Puree fresh strawberries in a separate bowl.
  5. Pour half the chocolate batter over the crust; add dollops of strawberry puree on top, then pour in the remaining chocolate batter. Use a knife to gently swirl them together.
  6. Bake for 55-60 minutes until edges are set but the center jiggles slightly. Cool in the oven with the door ajar for an hour, then refrigerate until firm.
