  • 1 lb boneless, skinless chicken breasts
  • 2 cups mixed bell peppers (red, green, yellow)
  • 1 large onion
  • 1 cup sliced mushrooms
  • 6 oz provolone cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup low-sodium chicken broth
  • 4 hoagie rolls

Instructions

  1. Slice chicken breasts into thin strips. Chop the bell peppers, onion, and mushrooms.
  2. In a large skillet over medium-high heat, heat olive oil. Add chicken and season with salt, pepper, and garlic powder; cook until golden brown (about 5 minutes).
  3. Add chopped vegetables; sauté for another 5 minutes until soft.
  4. Lower heat and place provolone cheese on top of the mixture. Cover for about 2 minutes until melted.
  5. Lightly toast hoagie rolls if desired. Fill each roll with the cheesy chicken and veggie mixture.
  6. Serve immediately, optionally drizzling with leftover sauce from the pan.
