  • 1 lb lean ground beef (80/20)
  • 2 cups cooked white or brown rice or quinoa
  • 1 cup shredded cheddar cheese
  • 2 cups chopped romaine or iceberg lettuce
  • 1 cup diced tomatoes
  • ½ cup dill pickles
  • ¼ cup ketchup
  • 2 tbsp yellow mustard

Instructions

  1. Cook rice or quinoa according to package instructions (about 15 minutes).
  2. In a skillet over medium heat, brown the ground beef for about 6-8 minutes, breaking it up as it cooks.
  3. Drain excess fat and season the beef with salt and pepper.
